Orange Cupcakes

Cupcakes 160g Platypus Baking Mix 45g Sugar 65g butter, softened 125ml freshly squeezed orange juice   Method: 1. Pre-heat oven to 180 degrees. 2. Mix all ingredients together with whisk or electric mixer for 1 minute. Poor into greased patty pans and bake for 15-20 minutes or until skewer inserted in the middle comes out clean. Note: to make vanilla cupcakes, substitute 125ml rice milk and 1 teaspoon of vanilla for orange juice.
